Shallot, dijon and mozz salad

A few months ago I posted a recipe for a “clean out your fridge salad” and, as appetizing as that sounds, I think I have built something better. This salad, with a new dressing and new ingredients is my latest and greatest creation, leaving me with almost 100% of my servings of veggies per day with the added great taste. I can’t say for sure that it’s healthier, what with the cheese and mustard dressing but I can say that it was amazing and I crave it everyday.

Ingredients
  • Green leaf lettuce
  • Mozzarella
  • Avocado
  • Cucumbers
  • Olives
  • Carrots
  • Tomato
  • Shallot & mustard dressing (chopped shallots, dijon mustard, olive oil, apple cider vinegar, honey)

Alt recipe: Layer hummus and stack the ingredients between two slices of bread. This version will give you some added carbs to keep you fuller longer.
