Clean-out-your-fridge salad
The story: The funny thing about this "recipe" is that there is no recipe. What I mean to say is that this has been something I have been making in my apartment for over a year and I have just gotten around to writing something about it. The title sounds a little off-putting, ok, I'll give you that. But salads are just a great way to take those few olives and cherry tomatoes and put them to good use.
What happened: Typically I grocery shop once or twice a week and stock up on my vegetable essentials: veg-essentials. Without fail, I always wind up leaving with a box of arugula, sliced and pitted Kalamata olives, lemons, white kidney beans, an onion and typically shredded carrots....ok yeah and chocolate...and pizza crusts...and barbecue chips. There really isn't a precise way to make this salad - the point is, you can really take any/all vegetables and mix them together. The POINT of this post, however, is to stress how much better salads taste when they are chopped: refer to janky picture. Do yourself a favor and buy a salad-chopping device; you can throw in your ingredients whole and chop everything together...basically it's for salad people on a time crunch. Final thoughts: The more ingredients you add, the better the salad. There is no right way to make this, that's why I have neglected to go in deep with the process. But I can say that these salads are obsession-worthy and, by the way, insanely healthy. |
