3-Ingredient pancakes
You'd think it would take longer to make...
The story: It all dates back to last semester when I was on my massive health kick. A friend of mine is gluten free and recommended I try making protein pancakes. Since I have never been much of a meat lover I opted to take her advice. One weekend morning when I had a lot of time of my hands, I decided to give it a shot. What happened: I put 1 banana, 2 eggs and 1/3 of a cup of oats into my Magic Bullet and blended until smooth. I would recommend mashing up the banana before blending because sometimes it can get stuck to the bottom. I put a pan on medium heat with a little oil and made them the same way I would have made any other pancakes. Final thoughts: Yes, it's really that easy and no, it doesn't take a long time to make. It is a great way of getting rid of those last 2 eggs and the 1 overly ripe banana on your counter. Kind of like a clean-out-your-refrigerator- breakfast except it hits almost all the food groups and is really healthy... |
